Corn Fritters

Golden spelt corn fritters with fresh coriander and green shallots, served with a sweet chilli dipping sauce. Makes enough for two light meals.

You'll need
- 1 cup of spelt flour
- ¼ tsp of baking powder
- ½ teaspoon of sea salt
- 1 tsp ground coriander
- ½ tsp ground cumin
- 1 egg lightly beaten
- 1 tsp lemon juice
- ½ cup water
- 2 cups corn kernels – I used canned but you could use fresh
- 4 green shallots sliced
- ¼ bunch coriander chopped
- Virgin olive oil for frying
Method
Mix together the flour, baking powder, salt, ground coriander and ground cumin in a bowl. Add egg, lemon juice and water and stir until smooth. Add corn, coriander and green shallots and stir until combined – form into patties and fry until golden. Serve on salad and drizzle with the dipping sauce below if desired.
Dipping sauce
- ¼ cup white wine vinegar
- ¼ cup of white sugar
- 1 chilli finely chopped
- 1 tsp sea salt
- 1 clove garlic finely chopped
Combine all ingredients in a small saucepan. Heat until the sugar dissolves and pour onto corn fritters.
